Working principle

• The principle is that within a certain temperature range, the lower the temperature, the slower the bacteria multiply; the higher the temperature, the faster they multiply. However, if the temperature is too high, the bacteria will die. Different bacteria have different temperatures and heat and cold tolerances.
• Pasteurisation is in fact the use of pathogens are not very heat-resistant characteristics, with the appropriate temperature and holding time treatment, will kill all of them. However, after pasteurisation, a small proportion of harmless or beneficial, more heat-resistant bacteria and bacterial spores are still retained.
